Binyamina Cave is a special red blend of 65% Cabernet Sauvignon, 33% Merlot and 2% Petit Verdot, which is made and aged under very special circumstances. This wine is made in an ancient cave in the Har Horshan Natjure Reserve, high in the Carmel Mountains. This cave has the perfect temperature and humidity levels for wine to flourish, and that is where Binyamina's winemakers craft this ultra-premium cuvee. The Binyamina Cave 2009 is aged in a barrel for two years before bottling and you will feel a connection to the past as you sip this deep, complex wine. It shows characteristics of currant, plum and cedar, layers of earthiness unfold over a long finish. With a firm tannic structure this wine can continue to age in bottle for 3-5 more years. Enjoy this bottle with cote de boeuf, roast goose, roast duck or hard cheeses.
